Tapioca and Date Pudding
4 Tbs tapioca1/4 tsp salt2 Tbs cold water1 c boiling water2 Tbs sugar8 dates, cut fine1 Tbs lemon juice1 egg yolk1 egg white1 tsp vanillaSoak the tapioca in cold water for ten minutes. Add the salt and boiling water and cook in a double boiler until transparent. (About twenty minutes.)Add the sugar and the dates cut fine, the lemon juice, egg yolk and vanilla. Remove from the fire and add the stiffly beaten egg whites. Pile the mixture lightly in glass dishes and serve cold.Makes three servings.
